The New Zealand Backcountry 

In New Zealand, it is the native forest, which once covered most of the land. Dense and dark, it was alive with birds, insects and lizards, but sometimes impenetrable to humans. Much was burnt and cleared. Today, we value the surviving stands for their beauty, and as a habitat for unique species.

The South Island is divided by the Southern Alps, which traverse most of its length and rise to over 3,000 m. To the west of the alps lie rainforests. To the east are the farmlands of the Canterbury Plains, formed by rivers flowing from the mountains. In the south, a series of large lakes formed in depressions that were scoured out by huge glaciers.

Our backcountry adventures are about the experience and ensuring that our New Zealand destinations retain their natural character and cultural diversity for future generations to enjoy.

If you have chosen to join us to get away from it all and just take it easy, that’s exactly what we will do.

The mornings will start with a wholesome breakfast before we depart camp for the next location down river, stopping for lunch on the way. Upon reaching our next destination, you may choose to swim, try your hand at skimming some stones, fishing, bush walking or a bit of wilderness yoga if you must. As the evening draws near we will all be found relaxing around the campfire before tucking into dinner followed by your unique accommodation awaiting nearby.

Backcountry Cuisine

We cater, You cater or enquire about our travelling Chef. Our Chef will accompany the trip to make it an authentic gourmet wilderness dining experience. Some of our chefs have worked in some of New Zealand’s premier restaurants and have a passion and love for fine cuisine which they love to share. We are very much about sharing, be it the experience, the catch or our secret locations.

Breakfast

A steaming hot kiwi style breakfast provides welcome warmth to counter the cool crisp river air. You might think you’re still dreaming when you see plates of bacon, eggs, hashbrowns and various other delights we offer, but it’s the way every morning on the river begins. Our guides are not only trained river professionals, they’re talented campfire cooks as well. We serve fresh and wholesome food on all river adventures.

Lunch

A wonderful selection of fresh meats and cheeses, delicious bread, along with fresh seasonal veggies and a variety of spreads satisfy hearty lunchtime appetites after a morning on the river. Tasty chicken and veggie wraps or perhaps a subway style spread may be on offer. Tea, coffee and bottled water are available at any time of the day.

Dinner

While you enjoy delectable appetisers like our famous “backcountry mussels” and relax and at the river’s edge, the guides prepare a dinner that is sure to surprise and please. Every night is different, but the menu will likely include smoked chicken, shotgun steaks, pasta, or fresh fish, your choice of dressing and condiments. Ember-roasted muffins, Chocolate banana Brulee and other scrumptious desserts deliciously top off the evening meal. Please advise us of any dietary requirements when booking. Our backcountry menu is subject to change due to seasonal produce available.
